 Pit

Tianyoude's highland barley pit is different from traditional pits. The pit is a strip pit made of natural granite and is the only granite pit in China's white spirit circle. As granite is smooth, hard, wearable, anti-corrosion, warm in winter and cool in summer, it not only is convenient for pit cleaning and inhibiting generation of bacteria but also can help low-temperature slow fermentation of fermented grains, promote generation of flavor components and endow liquor body with fresh, pure, smooth, clear and harmonious aroma. The whole fermentation cycle is about 80 days, the first and secondary fermentation cycles are about 25 days respectively, and the third and fourth time fermentation cycles are about 15 days respectively. When every fermentation time is due, the fermented grains will be taken out of the pit and be steamed and the liquor base will be put into storage. The fermented grains will be cooled, added with yeast and then put into pit for further fermentation. Such a procedure of separated mixing and heating of material and fermented grains will be repeated for four times. If it is normal fermentation, the alcohol content of liquor after the first fermentation is about 75°, mainly featuring the aroma of grain, that after the secondary fermentation is about 70°, mainly featuring pure aroma and mild liquor body, that after the third time fermentation is about 65°, mainly featuring mellow and crispy taste, and that after the fourth time fermentation is about 60°, mainly featuring lingering aftertaste.
