 Underground Cellar

Long time ago, the Mingliu liquor made by Tu people usually was stored in jars and then buried under sheepfolds or heated brick beds in living rooms. After about a year, they dug out the jars, added liquor into the jars until full and buried them again. This procedure would be repeated for two or three times, and the liquor in the jars would present golden color and luster. The liquor was so thick that they could even pick it up with chopsticks.   

The Underground Cellar is used for storing various kinds of Mingliu liquor made by the manor. It was built in accordance with the requirements on temperature, humidity, ventilation and illumination in the aging and maturing process of Mingliu liquor through repeated scientific experiments to obtain various data indexes of the optimum environment for storing Mingliu liquor. The Underground Cellar is divided into four areas, namely Wooden Barrel Cellaring Area, Ceramic Pot Cellaring Area, Burial Area and Liquor Tasting Area. Traditional highland barley brewing process is the essence of diverse folk traditional crafts and rich in scientific, historical, cultural, economic and social values. As an important carrier to present Qinghai's folk customs and food culture, it presents distinctive local features.
